Add the chopped suadero and cook over medium-high heat for 5 to 8 minutes, stirring occasionally, until some pieces are golden brown and slightly crispy.

4. Heat the tortillas
Heat the tortillas directly on a hot plate or in a hot pan.
For more substantial tacos and an authentic taqueria style, use two tortillas per taco.
5. Assemble the tacos.
Place a generous portion of suadero on the warm tortillas.
Add chopped white onion and fresh coriander.
Serve with lime, green or red salsa, spring onions and radishes according to your taste.
