The first step is to wash the parsley in water. While doing so, remove any leaves or stems that look dry or damaged. After washing the parsley, spread it out on several sheets of paper towels to dry.
Fill a jar—preferably glass, as it preserves food better—halfway with water. Then, just as you would with cut flowers, place the parsley stems into the jar. Cover the top with a plastic bag—the kind used for freezing food. Secure the bag over the opening with a rubber band.

Using scissors, cut small slits on the sides of the bag to allow for air circulation. Now you can place the jar of parsley in the refrigerator. Ideally, it should fit in the designated compartment on the inside of the fridge door.
